Ingredients

  • Base:
  • 4 Mars bars approximately 260g, roughly chopped
  • 100 g unsalted butter cubed
  • 2 tbsp golden syrup
  • 175 g crispy rice cereal
  • Chocolate Topping:
  • 200 g good quality milk chocolate finely chopped
  • 50 g unsalted butter cubed

Method

  1. Line a 30x20cm tin with parchment.
  2. Melt chopped Mars bars, butter, and golden syrup together in a large saucepan over very low heat — stirring constantly — until completely smooth. Remove from heat immediately.
  3. Add rice cereal — stir quickly until every piece is coated.
  4. Tip into prepared tin — press firmly and evenly to a 2cm layer. Refrigerate 20 minutes.
  5. Melt chocolate and butter together until smooth. Pour over chilled base — spread evenly. Refrigerate 1 hour until completely set.
  6. Lift out of tin — cut into squares with a warm knife. Serve.

Notes

Melt over the lowest possible heat and stir constantly — high heat or stopped stirring makes the caramel grainy.
Press the base firmly and evenly — a loose base crumbles when sliced.
Refrigerate base before adding chocolate — prevents the topping sinking into the soft base.
Use a warm knife to cut — cold knife cracks the chocolate and gives untidy slices.
Good quality chocolate for the topping — sets with a slight gloss and snaps cleanly.
Freeze in individual squares for up to 2 months.
