Ingredients
  

  • 8 good quality pork sausages
  • 2 tbsp sunflower oil
  • 1 large onion roughly chopped
  • 2 red peppers roughly chopped
  • 3 garlic cloves crushed
  • 1 tsp smoked paprika
  • 1 tsp dried or fresh thyme
  • 2 tbsp tomato purée
  • 400 g tin chopped tomatoes
  • 300 ml chicken or beef stock
  • 1 tbsp Worcestershire sauce
  • 1 tsp caster sugar
  • 400 g tin cannellini or butter beans drained (optional)
  • Salt and pepper
  • Fresh parsley to finish

Method
 

  1. Brown sausages in hot oil 8–10 minutes until deeply golden all over. Remove. Cut in half diagonally if large.
  2. In same pan, cook onion and peppers over medium heat 8 minutes. Add garlic, smoked paprika, and thyme — 2 minutes.
  3. Add tomato purée — 1 minute. Add tomatoes, stock, Worcestershire sauce, and sugar. Season. Scrape base.
  4. Return sausages. Bring to a gentle simmer. Cook uncovered 25–30 minutes until sauce is thick and rich.
  5. Add beans if using — last 10 minutes. Season. Scatter parsley. Serve from the pan.

Notes

Use good quality sausages — the quality determines everything.
Brown sausages properly — 8–10 minutes until deeply golden all over.
Smoked paprika is the key spice — do not substitute sweet paprika.
Cook uncovered for the final 25–30 minutes — this reduces and concentrates the sauce.
Add beans in the final 10 minutes for extra substance and protein.
Stores in the fridge for up to 3 days. Freezes for up to 3 months.
