- Brown sausages in hot oil 8–10 minutes until deeply golden all over. Remove. Cut in half diagonally if large.
- In same pan, cook onion and peppers over medium heat 8 minutes. Add garlic, smoked paprika, and thyme — 2 minutes.
- Add tomato purée — 1 minute. Add tomatoes, stock, Worcestershire sauce, and sugar. Season. Scrape base.
- Return sausages. Bring to a gentle simmer. Cook uncovered 25–30 minutes until sauce is thick and rich.
- Add beans if using — last 10 minutes. Season. Scatter parsley. Serve from the pan.
Notes
Use good quality sausages — the quality determines everything.
Brown sausages properly — 8–10 minutes until deeply golden all over.
Smoked paprika is the key spice — do not substitute sweet paprika.
Cook uncovered for the final 25–30 minutes — this reduces and concentrates the sauce.
Add beans in the final 10 minutes for extra substance and protein.
Stores in the fridge for up to 3 days. Freezes for up to 3 months.
