Ingredients
  

  • Chicken:
  • 4 boneless skinless chicken breasts
  • Salt and pepper
  • 1 tbsp plain flour for dusting
  • 2 tbsp sun-dried tomato oil
  • Sauce:
  • 4 garlic cloves finely sliced
  • 1 tsp chilli flakes
  • 1 tsp dried oregano
  • 100 g sun-dried tomatoes in oil roughly chopped
  • 200 ml chicken stock
  • 200 ml double cream
  • 75 g Parmesan finely grated
  • 1 tsp caster sugar
  • Large handful fresh basil torn
  • Salt and pepper

Method
 

  1. Season chicken. Dust lightly with flour. Sear in sun-dried tomato oil over medium-high heat 3–4 minutes per side until golden. Remove and set aside.
  2. Reduce heat to medium. Cook garlic 1 minute. Add chilli flakes and oregano — 30 seconds. Add sun-dried tomatoes — 2 minutes.
  3. Add stock — bubble and reduce 2–3 minutes. Add cream. Simmer. Add Parmesan and sugar — stir until melted. Taste and season.
  4. Return chicken — nestle into sauce, spoon sauce over. Cover partially. Cook over low heat 15–18 minutes until cooked through and sauce is thick and glossy.
  5. Add torn basil. Serve immediately from the pan.

Notes

Use the oil from the sun-dried tomato jar — it carries the flavour from the first step.
Dust chicken with flour before searing — better colour and helps sauce cling.
Add basil at the very end — it goes black and loses flavour in hot liquid.
Keep the heat low when chicken goes back in — vigorous boiling splits the cream sauce.
Taste before seasoning — sun-dried tomatoes and Parmesan are both salty.
Stores in fridge 3 days. Freezes 2 months.
